Professional Bio
Dr. John Cavallo is an accomplished executive with a global business background in flavors, food ingredients and nutritional products. A high-energy leader and effective communicator, John currently holds senior management positions at two related firms: Chief Technology Officer at Citrus & Allied Essences and Vice President of Global Business Development and a member of the Board of Directors at Trilogy Essential Ingredients. In these dual roles, John applies both his vast technical expertise and his international business development experience to a multitude of strategic and tactical issues on a daily basis. John is also credited with establishing the Trilogy’s flavor business in China in 2011, serving as General Manager of Trilogy Flavors Shanghai, Ltd. until handing the position off to local management and transitioning to his business development role.
Prior to his positions at C&A and Trilogy, Dr. Cavallo enjoyed a significant tenure at Symrise Inc. and its legacy company, Haarmann and Reimer. At this multinational flavor and fragrance company, recognized as being among the top 5 in the world with sales of over $3BIO, John was responsible for the company’s global beverage business, the largest segment within the Symrise group and was a member of the senior management leadership team. His work at Symrise provided the opportunity for involvement with significant corporate developments including mergers, acquisitions and the Symrise IPO.
Throughout his career, Dr. Cavallo has enjoyed success in opening new markets for his employers, especially in Europe and Asia. From JV partnerships to the establishment of local flavor manufacturing in China, John has created numerous strategic opportunities and achieved successful business growth across China and Southeast Asia. In these instances, John has been able to apply a keen understanding of the cultural aspects of doing business in Asia to the growth initiatives of his employers.
Dr. Cavallo holds an MBA from New York Institute of Technology and a Ph.D. in Physical Chemistry from The City University of New York, and has published a significant number of professional and technical papers in the field of surface chemistry with a focus on emulsions and microemulsions. He is a member of the American Chemical Society, the Institute of Food Technologists, and currently serves on the Board of Governors of FEMA , the Flavor and Extract Manufacturers Association as its President.
